When I look at the additives & preservatives in the convenience meals on our supermarket shelves, my maternal instinct kicks in to protect my kids against their long term harmful effects.

Using fresh ingredients to make homemade pesto is really worth the effort! Ready-made pasta sauce simply doesn’t use the best ingredients, and you will taste the difference. It’s SOOO easy to make!
200g Spaghetti
2 cubes crushed DOROT garlic
4 handfuls of fresh basil
100g pine nuts (or almonds, cashews or walnuts if cheaper)
A handful of freshly grated parmesan cheese
4 T Extra virgin Olive Oil
Salt to taste |

- Cook pasta as per packaging.
- While the pasta is cooking, put the rest of the ingredients in a food processor & pulse until well blended.
- Remove the pesto & place in a bowl. Add more olive oil until you get the right consistency.
- Mix through the spaghetti & serve.
Suggestion: I like to pile lettuce, chopped baby tomatoes, chopped cucumber, feta & bit of balsamic on top to make it a more substantial meal.
